日本で一番桜を迎えるのが早い絶景地「八重岳」にて、日々より多くのお客様に、より食べやすい形で提供するためにパン作りに励んでいます。全粒粉・植物性の「黒パン」、自家製シークヮーサー野生種酵母やリンゴ由来の自然派イースト、スペイン産のオリーブ油、また沖縄県産の黒糖パン生地等々、健康的な心と体を創るため、毎日の食事として食べていただきたいので、派手な美味しさよりも、地味な美味しさ（滋味）を目指しております。（乳製品・卵・マーガリンは一切不使用） パンと向き合う時は清く誠実でありたいとの願いから、朝は神様への感謝の祈りから始まります。「生かして頂いて、本当にありがとうございます」これからも、一つ一つ心を込めて、パン作りに励みます。
